Paper carton of Swedish pearl sugar — large, hard, opaque white grains that do not melt in the oven. That is the whole point of them: scattered over dough before baking they stay whole, giving the crunch and white speckling on Belgian waffles, Swedish kanelbullar (cinnamon buns), semlor, and Scandinavian sweet breads and biscuits.

You cannot substitute for pearl sugar. Granulated sugar dissolves; pearl sugar survives the bake. Anyone following a Scandinavian or Belgian recipe needs the real thing, and this is it — one ingredient, Swedish beet sugar, produced in Sweden.

The box notes something worth knowing: stored dry, sugar keeps essentially indefinitely. No best-before anxiety.
