A pale, waxed-looking wheel just under a kilo, with the distinctive fluted rim of a traditionally moulded Swedish cheese. Hushållsost — literally household cheese — is one of Sweden's most everyday cheeses: mild, buttery, slightly acidic, semi-hard, with small irregular holes. Sliced thin on crispbread for breakfast, which is how it is eaten in Sweden.
The calcium figure is exceptional: 770 mg per 100 g — 96% of the daily reference intake. That is an unusually high calcium figure for any cheese, and it is declared right on the Swedish label with its own %DRI line. Combined with 24 g of protein per 100 g and zero carbohydrate, this is nutritionally the strongest cheese on the shelf.
Made by a small independent dairy at Ljung in Västergötland, from Swedish milk.
