A slim box of round edible wafer papers — thin, brittle, almost weightless discs of baked wheat starch. Back-Oblaten are the traditional German baking base: you sit Lebkuchen, Elisenlebkuchen, macarons and marzipan confections on them before baking. The wafer bonds to the underside, stops the dough sticking to the tray, and is eaten along with the biscuit.
If someone is baking real German Lebkuchen at Christmas, they need these and there is no substitute — greaseproof paper does not work, because the wafer becomes part of the finished biscuit.
Two ingredients, both organic: wheat flour and starch. That is the entire recipe. It carries the EU Organic leaf with control code DE-ÖKO-001, which is a real third-party certification rather than a self-declared claim — and certified organic, which is rare for a baking wafer.
