Tan casing, 8 oz chub. Schmierleberwurst — literally "smearing liver sausage" — is the soft, spreadable German liverwurst, as opposed to the firmer sliceable kind. Hildesheimer names the style after Hildesheim in Lower Saxony. Rich, smooth and strongly livery; eaten thick on dark rye with mustard or pickled onion.
