A glass jar with a gold lid and a deep red geometric pattern, filled with glossy brick-red harissa — the Maghrebi chilli paste, thick and oily rather than powdery. Not a dry spice: this is a wet condiment.
Harissa is the foundation of North African cooking — stirred into stews and couscous, rubbed on lamb and fish, thinned with olive oil as a dip. Villa Jerada number it No.1, which signals a house recipe rather than a generic blend.
Nutritionally it is remarkably light for a condiment: 25 calories and only 90 mg sodium a tablespoon. Compare the Za'atar on the same shelf at 330 mg. For a chilli paste, that is low — most commercial harissa leans much harder on salt.
