Deep burgundy slices of air-dried beef, fanned in a vacuum pack, each edged with the rust-red spice crust that defines the product. Bastourma (pastırma) is the great cured whole-muscle beef of Armenia, Turkey and the Levant — salted, pressed, air-dried, then coated in a paste of garlic, fenugreek and paprika. Intensely savoury and aromatic; eaten in paper-thin slices, with eggs, or on bread.

Four ingredients: beef, water, salt, sodium nitrite — the spice crust is applied as a rub, and everything about the product is the beef and the drying. No MSG, no soy, no fillers. Beef only, so it suits customers avoiding pork. Sliced ready to use, which matters for a product that is difficult to cut thinly at home.
